Go to your happy place :)

Baby Zac is a happy little eating machine. He very much enjoys being in his highchair for meals and snacks. He is a great big mess. Even with a bib he manages to get food everywhere. I am just thrilled to have an eater. Even if that means extra laundry!
I wish I looked as cute covered in slobber and crumbs!

Don't Eat Pete!

Our friend, Rob, turned 27 this weekend. His wife, Lisa, through an amazing party for him on Saturday. We kicked things off with a rousing game of "Don't Eat Pete". It involved many m&m's and much laughter. Rob was the big winner. He cleared the board.
Ty and the guys played Wii sports. I tried it out as well, but I am about as terrible at Wii sports as I am at actual sports.
The kids had stickers to play with and pictures to color.
Max colored his leprechaun purple and his pot of gold, blue.
Mia was just excited about the whole thing.
It was a great party with great people. We had a blast!
Today we made it to church on time even with the time change :)
At home I made a great dinner with Jamaican Jerk chicken and sweet potatoes.
Zackary watched some Baby Einstein and played with a little yellow ball.
I love Sunday afternoons.
This evening I am making the Momofuku "Crack" pie. I will post about it later!

The Morning After

I remember, as a high school student, driving around with some girlfriends and eating entire bags of nacho cheese doritos. I recall making massive bags of peanut butter m&m's disappear. I often skipped breakfast at home and instead ate cookies in class.
I ate this way and felt and looked amazing.
I am noticing, as I get a little older, that I can no longer behave this way. I am usually very good at ordering salads and choosing smaller portions, but occasionally I indulge.
Last night Ty and I went out with some friends. We left Zack behind for the first time. We went to Friday's and we were having a great time laughing and talking. Then came the eating. I ordered onion rings AND fries. I ate them with glee.
I went to bed last night feeling terrible! I had a stomach ache and heartburn, and I felt like I had probably gained 10 pounds. I am SOOO old :(
This morning I am medicating myself with a long workout and lots of water. I am planning on making better choices for my well being.
Lesson learned.

Rain

It rained this morning.
We were not afraid and we armed oursleves with umbrellas. We danced in the rain.
After the rain dance we came inside for some steamy hot chocolate.
My happy place :)
Later the sun came out and we went back outside with our brightly colored chalk.
We became artists and may soon be very well known for our work.
Next we came back inside and watched Yo Gabba Gabba.
Finally Mia took a nap and I watched the Duggars go to Pigeon Forge. Max played with the bat cave and I broke out the momofuku cookies.
It has been a good day.

Granola Bar Scripture Time


This week I began setting aside a time to read the Book of Mormon to my children.
After their bath I wrap them in towels and dry them off. When they are dressed we sit around our little space heater and I break out the chocolate dipped granola bars.
Max and Mia eat their treats while I read a chapter.
So far so good. They seem to recognize that what we are doing is important. The granola bars were buy one get one free at Publix this week so we are set for a while.
I am thankful for these little moments.

Rich?

I finally made "millionaire" shortbread.
It is a bar cookie with a shortbread base. The shortbread is topped with chewy caramel and the caramel is topped with chocolate ganache. I used the Barefoot Contessa's recipe for the shortbread, Grandma Newman's recipe for the caramel, and my own design for the chocolate ganache. The combination made me feel very rich :)
I love to pretend we are really very wealthy!
Yes, that is Zackary in the background. He is holding a jar of nutella. He is kind of a chunk. I love him. He makes me feel rich too!

What to wear?

The forecast called for a week full of rain, and while we have had a bit, there has been plenty of beautiful sunshine and warm temperatures. Max and Mia went outside today to visit with some neighbors. Mia went dressed in her chef's uniform.
Such a cute little foodie in training.

Copycat

I am a copycat and I enjoy being one.
I hear about a fabulous cookie from a bakery or I watch Bobby Flay make a dish on "Throwdown" and I have to recreate it.
I have heard a lot about the Momofuku Milk Bar's famous cookies.
They feature all kinds of unusual additions and ingredients.
Today I branched out and made caramelized cornflakes to go in my

Copycat Momofuku marshmallow cornflake chocolate chip cookie.

These cookies are kind of like a cross between chocolate chip cookies and rice krispy treats.
Really yummy :)
Caramelized Cornflakes:

1 1/2 cups cornflakes
3 tablespoons powdered milk
6 tablespoons sugar
1/2 teaspoon salt
7 tablespoons melted butter

1. Preheat oven to 275 degrees
2. Crush cornflakes in a bowl.
3. Mix together the powdered milk, sugar, and salt.
4. Pour melted butter over cornflakes and sprinkle dry ingredients on top. Toss to coat.
5. Spread cornflake mixture on a lined baking sheet and bake for 20 minutes.
6. Remove from oven and cool before using in cookie recipe.

Cookies:

1 cup butter
1/2 cup + 2 tablespoons granulated sugar
1/2 cup + 2 tablespoons brown sugar
1 egg yolk
2 tablespoons milk'
1 teaspoon salt
1/8 teaspoon baking soda
1/4 teaspoon baking powder
2 1/2 cups flour
3/4 cup chocolate chips
1 cup mini marshmallows
1 1/2 cups caramelized cornflakes

1. Line baking sheets with parchment paper and heat oven to 350 degrees.
2. Cream the butter with the sugars. Add the egg and milk.
3. Blend the dry ingredients : flour, baking powder, baking soda, and salt. Mix dry ingredients with the butter mixture.
4. Add in chocolate chips, marshmallows, and cornflakes. Scoop dough into balls and place on prepared baking sheets. Bake for 8-10 minutes and cool on a wire rack.

Whose Boots?

Max has a pair of cowboy boots that he loves. Mia loves them too!
Max saves them to wear to church and other special occasions. Mia steals them to wear while she dances in the kitchen and strolls outside. This girl needs a pair of her own :)
